It was delicious, I ate two of them. I baked the portabella for about 8 minutes then added the toppings...marinara, Daiya Mozzarella cheese and basil. Baked for another 10 minutes. It was so good and I will be making these again!

Here is where I buy my rice paper for my spring rolls and other delicious asian goodies...Did I mention spring rolls??? Made a bunch later that day!!
Also went to BJ's and bought 2 big bags of Gardein Seven grain tenders. Hubby and I enjoyed those for dinner. I made myself a lettuce taco and buffaloed the tenders and topped with guacamole.
I slept in a little on Saturday...As I was lying in bed I heard some noise coming from the kitchen, sounding like someone was frying something??? "What was going on?" I thought to myself. I walked downstairs and hubby was frying the spring rolls!!!! Oh no, I thought to myself, until I tasted one. Surprise, surprise, they were Good! A little messy, but good. So this is what I did...I rolled more rolls, adding cabbage and spicy thai walnut meat, and here is what we got...
They were divine. Hubby said that he just needed something cooked and I can respect that! Glad that he did because they were fabulous. He wants me to say that they were inspired by him...and they were!
Went to a Birthday Club Celebration Saturday afternoon. The restaurant that was chosen is called Houlihans. My good friend chose this place because of the vegan/vegetarian options. I must say that I was pleasantly surprised by the selections. I ordered the Tuscan white bean salad. It was so good that I couldn't wait to get home to recreate. And that is what I did today.
Again, delicious. I could tell that hubby was not too excited about the beans so I made his with quinoa pasta and he loved it.
The weekend is over...must mentally prepare for the work week!
