Lunch was...
White bean spinach salad which were leftovers from last night, kale salad and carrot and apple salad. Yummy and filling. When I got home from work I could not figure out what to eat. Hubby wasn't home so I thought that I would make something that he's not that crazy about. Portabella pizzas. I know that I blogged about them yesterday, but I tend to obsess when I find something that I really like. I mean, I will eat it every other day for two weeks, then I won't want it any more. Check out my socca blog. I was totally obsessed with socca. I still have soccalove just not as much as in the beginning.
Remove the stems and the skirts from the portabella, bake at 350 degrees for 8 minutes.
Then fill with your favorite pizza topping...I use marinara, daiya cheese and basil...
Bake for another 8-10 minutes until cheese melts and Enjoy!
And yes, I ate both of them!!

I love your idea of using Portabella mushroom caps as the pizza base. I've bookmarked this and will definitely make it once I'm back in Canada and can get a hold of Daiya again!
