So, this weekend I made spring rolls. This was a new adventure for me. I have always loved fresh spring rolls. As a matter of fact Vietnamese food is one of my favorite foods so to duplicate this dish made me very happy! I watched the youtube video from Chef Tina Jo to learn how to fold them, how to work with the rice paper and get some ideas of what to fill them with I also used her recipe for the Peanut Sauce...
Peanut Sauce
1/4 cup toasted sesame oil
1/2 cup peanut butter, organic, raw
2 Tbsp lemon juice, freshly squeezed
2 Tbsp agave nectar
1 Tbsp chipotle peppers, diced
1/2 cup water, filtered
Instead of peanut butter I used almond butter and in place of the chipotle peppers I used 1/3 cup of chili garlic sauce. This Peanut sauce is delicious. Hubby used it as a dipping sauce for the Gardien 7 grain chicken tenders.
Very proud of my first attempt at these! They were delicious!
