For the Love of Socca!

What is socca you ask?  Well, I had no idea what it was either until I stumbled upon this website by way of Twitter...pure2raw.    After reading and researching for myself a new food group(the socca food group) has opened up for me.  This is why I love Twitter,  @pure2raw are a couple of "tweeps" that I follow on Twitter.   For days I studied their website and I wondered, "What in the heck is socca and why do they love it so"???  I needed to,  had to,  find out for myself because it looked delicious.  My first attempt...

What is it made of you ask???  1 cup Garbanzo bean flour, 1 cup water, 2 tbsp olive oil or coconut oil, 1/2 tsp sea salt...that's it!!!!  Once I got the recipe down to a science I started to play with it a bit...
This one I added a bit of  daiya mozzarella cheese to it...tasty with my kale salad...All Hale to the Kale!
Tried it as a pizza crust...twice, one with cooked toppings and the other with raw toppings...both soccalicious!!!!
Each time with the pizza crust I added 1/2 tsp of garlic powder along with the other ingredients.
Last night I made a dessert socca.  In place of the salt I added 1/2 tsp of cinnamon.  Filled it with coconut banana butter .  I added a few squares of fresh pineapple to the banana butter recipe...Yummers!!!!

Tonight, I made 2 soccas, one with fresh tomatoes and basil and the other with sun dried tomatoes... 

 Hubby said the fresh tomato and basil was his favorite...I can't decide which is my favorite...I love them all.  So, as you can see I have been busy getting my socca on.  This isn't all that I have been creating but I have been very excited about the socca in my life,  just ask my husband...He's had to taste them all.  I will blog more often!
