Spring Rolls Anyone???

This picture has absolutely nothing to do with my blog but I thought that they looked beautiful on my table.  Tulips are my favorite flower.

So, this weekend I made spring rolls.   This was a new adventure for me.  I have always loved fresh spring rolls.  As a matter of fact Vietnamese food is one of my favorite foods so to duplicate this dish made me very happy!  I watched the youtube video from Chef Tina Jo to learn how to fold them, how to work with the rice paper and get some ideas of what to fill them with  I also used her recipe for the Peanut  Sauce...

Peanut Sauce
1/4 cup toasted sesame oil
1/2 cup peanut butter, organic, raw
2 Tbsp lemon juice, freshly squeezed
2 Tbsp agave nectar
1 Tbsp chipotle peppers, diced
1/2 cup water, filtered

Instead of peanut butter I used almond butter and in place of the chipotle peppers I used 1/3 cup of chili garlic sauce.  This Peanut sauce is delicious.  Hubby used it as a dipping sauce for the Gardien 7 grain chicken tenders.


Very proud of my first attempt at these!  They were delicious!

For the Love of Socca!

What is socca you ask?  Well, I had no idea what it was either until I stumbled upon this website by way of Twitter...pure2raw.    After reading and researching for myself a new food group(the socca food group) has opened up for me.  This is why I love Twitter,  @pure2raw are a couple of "tweeps" that I follow on Twitter.   For days I studied their website and I wondered, "What in the heck is socca and why do they love it so"???  I needed to,  had to,  find out for myself because it looked delicious.  My first attempt...



What is it made of you ask???  1 cup Garbanzo bean flour, 1 cup water, 2 tbsp olive oil or coconut oil, 1/2 tsp sea salt...that's it!!!!  Once I got the recipe down to a science I started to play with it a bit...
This one I added a bit of  daiya mozzarella cheese to it...tasty with my kale salad...All Hale to the Kale!
Tried it as a pizza crust...twice, one with cooked toppings and the other with raw toppings...both soccalicious!!!!
Each time with the pizza crust I added 1/2 tsp of garlic powder along with the other ingredients.
Last night I made a dessert socca.  In place of the salt I added 1/2 tsp of cinnamon.  Filled it with coconut banana butter .  I added a few squares of fresh pineapple to the banana butter recipe...Yummers!!!!

Tonight, I made 2 soccas, one with fresh tomatoes and basil and the other with sun dried tomatoes... 

 Hubby said the fresh tomato and basil was his favorite...I can't decide which is my favorite...I love them all.  So, as you can see I have been busy getting my socca on.  This isn't all that I have been creating but I have been very excited about the socca in my life,  just ask my husband...He's had to taste them all.  I will blog more often! Conquered my Fear of the Collard Wrap

Weird title I know, but hopefully someone out there understands where I am coming from.   Since I started my new raw lifestyle I have been very open minded and have tried lots of new foods loving most of them.  Kale salad was a fear that I overcame pretty early on.  I grew up eating kale greens that had been cooked so much that the color was a dull green.  Now I eat it raw!  I was very skeptical of the raw kale at first, now it is a staple in my fridge.   I eat it just about every day.  My skepticism was greater with the collard.  I have been raw/vegan for over 4 months now and I figured it was time to get over myself and eat a collard wrap so that is what I did.

After about an hour of looking at You Tube videos on how to make a collard wrap I decided that my time had come...

Not a perfect wrap but that will come with time.  I filled it with romaine, corn, tomatoes, marinated mushrooms, tempeh and avocado ranch dressing...

It was delicious!!!! I will fix this again.  It was so good that I ate one and a half.  Hubby ate the other half.   Another fear conquered!!!!!   Not a big fear but nonetheless a fear!!!!
