I followed the recipe that I posted yesterday except I added spinach to it and I did not add olives. It was very good. Hubby suggested that it marinate for a few hours but said it had good flavor. I cooked the garbanzo beans myself instead of using canned.
The next thing I created was the Quinoa with Balsamic Roasted Mushrooms...
I didn't stray away from this recipe. I used all the ingredients that it called for. It was also delicious. My daughter said that this may be her favorite thing I've created thus far. I had never eaten quinoa before today. They will now be a staple in my cupboard.
Next was the Raw Vegetable "Pasta" with Tomatoes and Herbs...
This was a simple and delicious dish. I did everything this recipe called for also. Put this atop my spinach salad for dinner. Will definitely make again!!!
And the last dish I created was Butternut Squash with Garbanzo Beans...
Very good and simple dish. I tossed the squash in olive oil and salt and pepper then roasted in the oven for about 25 minutes. Tossed with garbanzo beans and fresh basil. Delish!!! Basil may be my favorite herb!!!
And of all the items I created this was my dinner...
Pretty good day I must say. Loving the way I feel!!! And to steal from my husband..."These Are Great Days!!!!!!!!!!!!!!!!
