I was talking to my husband last night about something, not sure what, when I realized that I have not eaten butter in 28 days. That's a big one for me because I love butter. The woman who introduced me to TV cooking shows also shared my love of butter...Julia Childs. I loved her and I loved butter!!! And I swear that this is a huge deal for me. I was even using spray butter on my oatmeal. Wow!!!!
28 days done! I had to think a little about what recipe to share tonight. And I thought about something that has been a staple in my refrigerator since the day I tasted it...Kale Salad. I would have never thought that this salad would be so good and so satisfying and packed full of nutrients. When the bowl gets empty I automatically make another bowl of it. Everyone that has tasted it loves it. The only thing is when I am creating in the kitchen I do not measure things so I will do my best with this one. I promise you that if you try it you will love it!!!
Kale Salad recipe:
one bunch of kale(stem and tough ribs removed cut into bite size pieces)
juice of 1 lemon
1/3 cup olive oil
2 cloves of garlic
2 cups sliced mushrooms
1 cup shredded carrots
sea salt and pepper to taste
In a large bowl mix all dressing ingredients together, add kale and toss to mix. Let sit for at least an hour before serving...Enjoy!
Feel free to add other ingredients, tomatoes, cucumbers, avocados, onions, etc...You can't go wrong!!!
I got a new name today...VeRAWnica. haha too funny! Also received a call today from the Coach Store stating that my reward for finishing this challenge was down to 2. So, I guess I better go pick it up tomorrow!!!!!!! 28 days done 2 to go!!!!
