Day 27: Raw Food Challenge

Was it me, or did this feel like the longest day ever???  Oh well, 3 days to go with this challenge.  Funny thing happened today, my boss asked me why I was doing this.  I told him that I feel great and I am trying to be healthy.  His answer was why would you want to do that??  I know that he was kidding(sorta) but I am sure that there are many people who feel this way and that is totally OK.  This is  definitely not for everyone but it is for me.

Got a new food processor today...

And already this machine has had a workout.  Made mango salsa, cashew spread and almond butter sauce.  Whew!!! I'm tired just typing it!  Also made guacamole tonight.  Like I said previously my hubby loves the cashew spread.  Tonight he said that that was his favorite raw food item so far.  Love him for his tremendous support!!!!!  My daughter said tonight that I get more excited about them liking my raw food than myself.  Funny how that happens.

Made broccoli slaw tonight at husbands request...

Well, I was trying to put a picture of the broccoli slaw on here but technical difficulty will not allow me to so I will move forward with a recipe.  The sauce for the broccoli slaw:

Spicy Almond Butter Sauce
1/2 cup almond butter 
1 1/2 tablespoons lemon juice 
2 teaspoons Agave 
2 cloves garlic, roughly chopped 
1/2 teaspoon sea salt 
1 teaspoon chopped red pepper(more or less depending on how spicy you like)
1/3 cup water (add more if too thick)
1 tablespoon Nama Shoyu
Put all ingredients in your brand new food processor and puree
This sauce is delicious on Kelp noodles and broccoli.  I like to add more red peppers because I like things extra spicy....Enjoy!!!!
