Day 22: Raw Food Challenge

Wow, guess I fell asleep last night and forgot to blog...oops!  It was Thursday, last work day of the week for me.  I was tired and probably couldn't have gotten my thoughts together anyway.  Had a pretty regular food day yesterday.  I did take a picture of my lunch but I took so many  pictures today that I don't want to inundate this blog post with pictures,  especially with food that I've already posted.

So, today is Friday and I have completed 22 days of this challenge.  Began my morning with my normal Friday smoothie, chocolate almond milk, bananas and strawberries.  It was extra thick and delicious this morning. (smiles)

Later in the afternoon I went to Roots Market and did a little shopping.  There were some things that I wanted to try this weekend.  I purchased a young coconut there...

Not sure what I am going to do with this but I understand that there are many nutrients inside.  Going to wait on my hubby to get home and let him cut into this piece of fruit/nut...is coconut a fruit or a nut??????

Next thing I purchased was a jar of Tahini and dry chickpeas for the raw hummus that I plan on making.
After looking at the recipe, I realize that the chickpeas need to soak for 24 hours...
So, that is what I am doing.  Maybe there will be a raw hummus picture tomorrow??!!  Speaking of soaking,  I am also soaking raw cashews for cashew spread...
Thank goodness they only needed to soak for a couple of hours.  The finished product was better than I expected.  Actually rolled some of it in Nori sheets...

So, I have had a pretty eventful day. Experimenting in the kitchen all afternoon.  I am enjoying looking on the internet for recipes to try.   I am amazed at all the raw food recipes that I am finding.

Dinner was one of my favorites, Kelp noodle salad with a couple of my cashew spread rolls...
Very yummy and very satisfying!!!

Day 22 down 8 days to go...hopefully tomorrow there will be a hummus photo!!!!!
